Why hasn't Kari Arnason been asked to use his long throw during the Euro Championship games for Iceland?

Because the others are better at it than him.

I'm struggling to think of any time it worked for us.

 The real answer is that Iceland lets Gunnarson take the long throws. Did you notice how Gunnarson threw a long ball which met Arnason who in turn headed the ball into the path of Siggurdson who in turn put the ball into the back of the net for Iceland's second goal?

Simples.
